Ingredients

  • 1 cup rice flour
  • 1/2 cup all-purpose flour
  • 1/4 cup semolina
  • 1/2 tsp salt
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin seeds
  • 1/4 cup chopped onion
  • 1/4 cup chopped tomatoes
  • 2-3 green chilies, finely chopped
  • 1/4 cup chopped coriander leaves
  • 1/2 tsp ginger, grated
  • 1/2 tsp garam masala
  • 1/2 cup butter masala sauce
  • Oil, for cooking

Instructions

  1. In a large mixing bowl, combine rice flour, all-purpose flour, semolina, salt, turmeric powder, and cumin seeds. Add water to make a smooth batter.
  2. In a separate bowl, mix together onion, tomatoes, green chilies, coriander leaves, ginger, and garam masala to make the masala filling.
  3. Heat a non-stick pan over medium heat and pour a ladleful of batter. Spread it in a circular motion to make a thin pancake.
  4. Drizzle some oil around the edges and cook until the bottom is golden brown.
  5. Spread a spoonful of butter masala sauce on the pancake and add a portion of the masala filling on one side.
  6. Fold the pancake over the filling to make a half-moon shape and cook for a few more minutes until crispy.
  7. Repeat with the remaining batter and filling.
  8. Serve the Butter Masala Pancakes hot with coconut chutney or sambar.
