Ingredients
- 2 cups grated butternut squash
- 1/2 cup all-purpose flour
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped fresh cilantro
- 2 eggs, beaten
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- In a large bowl, combine the grated butternut squash, flour, onion, garlic, cumin, paprika, cayenne pepper, cilantro, and eggs. Season with salt and pepper. Mix until well combined.
- Heat vegetable oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the butternut squash mixture and carefully place it in the hot oil, flattening it slightly with a spatula. Cook for 3-4 minutes per side, or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
- Repeat the process with the remaining butternut squash mixture, adding more oil to the skillet as needed.
- Serve the butternut squash fritters hot with your favorite dipping sauce or chutney.
