Ingredients
- 1 small pumpkin, peeled and cubed
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 green chili, chopped
- 1 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt to taste
- 4 cups vegetable broth
- 2 tbsp oil
Instructions
- Heat oil in a large pot over medium heat. Add the onions, garlic, ginger, and green chili. Sauté until the onions are soft and translucent.
- Add the tomatoes, turmeric, cumin powder, and coriander powder. Cook for 5 minutes, stirring occasionally.
- Add the pumpkin, lentils, and vegetable broth. Season with salt and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30-35 minutes, or until the pumpkin and lentils are tender.
- Adjust the seasoning if needed and serve hot.
