Ingredients

  • 1 small pumpkin, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 green chili, chopped
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 4 cups vegetable broth
  • 2 tbsp oil

Instructions

  1. Heat oil in a large pot over medium heat. Add the onions, garlic, ginger, and green chili. Sauté until the onions are soft and translucent.
  2. Add the tomatoes, turmeric, cumin powder, and coriander powder. Cook for 5 minutes, stirring occasionally.
  3. Add the pumpkin, lentils, and vegetable broth. Season with salt and bring to a boil.
  4. Reduce the heat to low, cover the pot, and simmer for 30-35 minutes, or until the pumpkin and lentils are tender.
