Bwtwi Bai Rasam (pumpkin And Lentil Soup)
Bwtwi Bai Rasam is a traditional Tripuri Cuisine soup made with pumpkin and lentils. This hearty and flavorful soup is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 1 cup diced pumpkin
- 1/2 cup red lentils
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 green chilies, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 4 cups water
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Wash the red lentils and set aside.
- In a large pot, heat some oil and add the cumin seeds and mustard seeds. Once they start to splutter, add the chopped onions and green chilies. Sauté until the onions are translucent.
- Add the diced pumpkin, chopped tomatoes, and turmeric powder. Cook for a few minutes until the tomatoes are soft.
- Add the washed red lentils and water. Season with salt and let it simmer until the lentils and pumpkin are cooked through.
- Garnish with fresh coriander leaves before serving.
