Ingredients

  • 1 pound fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup green onions, chopped
  • 1/4 cup dill, chopped
  • 1/4 cup butter, melted
  • 1 package phyllo dough
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the chopped spinach, feta cheese, ricotta cheese, parsley, green onions, dill, salt, and pepper.
  3. Unroll the phyllo dough and place a damp towel over it to keep it from drying out.
  4. Brush a sheet of phyllo dough with melted butter, then place another sheet on top and brush with butter again. Repeat this process until you have 6 layers.
  5. Spread the spinach and cheese mixture evenly over the layered phyllo dough.
  6. Roll the phyllo dough into a log, then coil it into a spiral shape and place it in a greased baking dish.
  7. Brush the top with remaining melted butter.
  8. Bake in the preheated oven for 45 minutes, or until the pastry is golden brown.
  9. Let it cool for a few minutes before slicing and serving.
