Byrek Bonanza

Ingredients

  • 500g spinach, chopped
  • 200g feta cheese, crumbled
  • 1 onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 cup olive oil
  • 6 eggs
  • 1/2 cup plain yogurt
  • Salt and pepper to taste
  • 1 package of phyllo dough

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, mix together the spinach, feta cheese, onion, parsley, dill, olive oil, eggs, and yogurt. Season with salt and pepper.
  3. Layer half of the phyllo dough sheets in a greased baking dish, brushing each sheet with olive oil as you layer.
  4. Spread the spinach and feta mixture over the phyllo dough.
  5. Layer the remaining phyllo dough sheets on top, brushing each sheet with olive oil.
  6. Cut the pie into squares or triangles, then bake for 45 minutes or until golden brown.
  7. Let it cool for a few minutes before serving.
