Byrek Bonanza
Byrek Bonanza is a traditional Albanian savory pie that is perfect for any occasion. This flaky pastry is filled with a delicious mixture of spinach, feta cheese, and herbs, making it a crowd-pleaser for both family dinners and special gatherings.
Ingredients
- 500g spinach, chopped
- 200g feta cheese, crumbled
- 1 onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/2 cup olive oil
- 6 eggs
- 1/2 cup plain yogurt
- Salt and pepper to taste
- 1 package of phyllo dough
Instructions
- Preheat the oven to 180°C (350°F).
- In a large bowl, mix together the spinach, feta cheese, onion, parsley, dill, olive oil, eggs, and yogurt. Season with salt and pepper.
- Layer half of the phyllo dough sheets in a greased baking dish, brushing each sheet with olive oil as you layer.
- Spread the spinach and feta mixture over the phyllo dough.
- Layer the remaining phyllo dough sheets on top, brushing each sheet with olive oil.
- Cut the pie into squares or triangles, then bake for 45 minutes or until golden brown.
- Let it cool for a few minutes before serving.
