Byrek Me Kungull (kosovan Pumpkin Pie)

Ingredients

  • 500g pumpkin, peeled and diced
  • 1 onion, finely chopped
  • 200g feta cheese, crumbled
  • 1/4 cup olive oil
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1 package of phyllo dough
  • 1/2 cup melted butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the pumpkin, onion, feta cheese, olive oil, parsley, salt, and pepper.
  3. Layer 5 sheets of phyllo dough in a greased baking dish, brushing each sheet with melted butter.
  4. Spread the pumpkin filling over the phyllo dough.
  5. Layer another 5 sheets of phyllo dough on top of the filling, brushing each sheet with melted butter.
  6. Score the top of the pie into squares or triangles, then bake for 45 minutes or until golden brown.
  7. Allow the pie to cool for a few minutes before slicing and serving.
