Byrek Me Kungull (kosovan Pumpkin Pie)
Byrek me Kungull is a traditional Kosovan savory pumpkin pie that is perfect for autumn. This flaky pastry filled with a creamy and flavorful pumpkin filling is a popular dish in Kosovo and is often enjoyed as a snack or appetizer.
Ingredients
- 500g pumpkin, peeled and diced
- 1 onion, finely chopped
- 200g feta cheese, crumbled
- 1/4 cup olive oil
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1 package of phyllo dough
- 1/2 cup melted butter
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the pumpkin, onion, feta cheese, olive oil, parsley, salt, and pepper.
- Layer 5 sheets of phyllo dough in a greased baking dish, brushing each sheet with melted butter.
- Spread the pumpkin filling over the phyllo dough.
- Layer another 5 sheets of phyllo dough on top of the filling, brushing each sheet with melted butter.
- Score the top of the pie into squares or triangles, then bake for 45 minutes or until golden brown.
- Allow the pie to cool for a few minutes before slicing and serving.
