Ingredients
- 1 pound fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 cup ricotta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped scallions
- 2 eggs, beaten
- Salt and pepper to taste
- 1/2 cup olive oil
- 1 pound phyllo dough sheets, thawed if frozen
Instructions
- In a large bowl, mix together the chopped spinach, feta cheese, ricotta cheese, parsley, scallions, and beaten eggs. Season with salt and pepper to taste.
- Preheat the oven to 350°F (175°C). Lightly oil a 9x13 inch baking dish.
- Place a sheet of phyllo dough in the prepared baking dish, allowing the edges to hang over the sides. Brush the phyllo sheet with olive oil, and repeat layering with more sheets of phyllo, brushing each sheet with oil.
- Spread the spinach and feta mixture evenly over the layered phyllo dough.
- Layer the remaining phyllo sheets on top of the spinach mixture, brushing each sheet with oil. Tuck in the edges to seal the burek.
- Score the top of the burek into squares or triangles using a sharp knife.
- Bake in the preheated oven for 40 minutes, or until the burek is golden and crispy.
- Allow the burek to cool for a few minutes before slicing and serving.
