Ingredients

  • 4 cups all-purpose flour
  • 1 cup plain yogurt
  • 3 eggs
  • 1/2 cup olive oil
  • 1/2 cup water
  • Salt to taste

Instructions

  1. In a large bowl, mix the flour and a pinch of salt. Gradually add the water and knead the dough until smooth. Divide the dough into 4 equal parts and let it rest for 15 minutes.
  2. In a separate bowl, beat the eggs and mix in the yogurt until smooth. Season with salt to taste.
  3. Roll out one portion of the dough into a thin sheet and brush it with olive oil. Repeat with the remaining portions of dough.
  4. Layer the oiled dough sheets on top of each other to form a stack.
  5. Spread the yogurt and egg mixture evenly over the stacked dough.
  6. Roll the dough stack into a log and then coil it into a round pie shape.
  7. Transfer the pie to a greased baking dish and brush the top with olive oil.
  8. Bake in a preheated oven at 350°F for 40 minutes or until golden brown.
  9. Serve the Byrek with Yogurt warm or at room temperature.
