Cabbage and Bacon Stew (Kapsa- ja peekonihautis)

Ingredients

  • 1 head of cabbage, chopped
  • 200g bacon, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the diced bacon over medium heat until it becomes crispy. Remove the bacon from the pot and set it aside, leaving the bacon fat in the pot.
  2. Add the chopped onion and minced garlic to the pot with the bacon fat and sauté until the onion becomes translucent.
  3. Add the chopped cabbage and diced potatoes to the pot, and pour in the chicken or vegetable broth. Season with salt and pepper.
  4. Bring the stew to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the potatoes are tender.
  5. Once the stew is ready, serve it hot, garnished with the crispy bacon.
