Cabbage and Bacon Stew (Kapsa- ja peekonihautis)
Kapsa- ja peekonihautis, or Cabbage and Bacon Stew, is a traditional Estonian dish that is hearty, flavorful, and perfect for a cozy meal on a cold day.
Ingredients
- 1 head of cabbage, chopped
- 200g bacon, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, cook the diced bacon over medium heat until it becomes crispy. Remove the bacon from the pot and set it aside, leaving the bacon fat in the pot.
- Add the chopped onion and minced garlic to the pot with the bacon fat and sauté until the onion becomes translucent.
- Add the chopped cabbage and diced potatoes to the pot, and pour in the chicken or vegetable broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the potatoes are tender.
- Once the stew is ready, serve it hot, garnished with the crispy bacon.
