Ingredients
- 1 small head of cabbage, shredded
- 1 can of white beans, drained and rinsed
- 2 carrots, diced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 bay leaf
- 6 cups vegetable broth
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
- Add the diced carrots and minced garlic to the pot. Cook for a few minutes until the vegetables start to soften.
- Stir in the shredded cabbage and cook until it begins to wilt.
- Pour in the vegetable broth and add the bay leaf. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
- Stir in the tomato paste and white beans. Simmer for an additional 15 minutes.
- Season the soup with salt and pepper to taste.
- Remove the bay leaf before serving.
