Ingredients
- 1 medium head of cabbage, shredded
- 1 lb Romanian sausages, sliced
- 2 onions, chopped
- 3 carrots, diced
- 3 potatoes, peeled and cubed
- 1 can (14 oz) diced tomatoes
- 6 cups chicken or vegetable broth
- 2 bay leaves
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until they are translucent.
- Add the sliced sausages to the pot and cook until they are browned.
- Stir in the shredded cabbage, diced carrots, and cubed potatoes. Cook for a few minutes, stirring occasionally.
- Pour in the diced tomatoes and chicken or vegetable broth. Add the bay leaves and season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the vegetables are tender.
- Stir in the chopped parsley and adjust the seasoning if needed.
- Remove the bay leaves before serving.
