Cabbage and Sausage Soup (Ciorbă de Varză cu Cârnați)

Ingredients

  • 1 medium head of cabbage, shredded
  • 1 lb Romanian sausages, sliced

  • 3 carrots, diced
  • 3 potatoes, peeled and cubed
  • 1 can (14 oz) diced tomatoes
  • 6 cups chicken or vegetable broth
  • 2 bay leaves
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until they are translucent.
  2. Add the sliced sausages to the pot and cook until they are browned.
  3. Stir in the shredded cabbage, diced carrots, and cubed potatoes. Cook for a few minutes, stirring occasionally.
  4. Pour in the diced tomatoes and chicken or vegetable broth. Add the bay leaves and season with salt and pepper.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the vegetables are tender.
  6. Stir in the chopped parsley and adjust the seasoning if needed.
  7. Remove the bay leaves before serving.
