Голубцы, or Cabbage Rolls, are a beloved dish in Belarusian cuisine. These hearty rolls are filled with a flavorful mixture of ground meat, rice, and spices, then wrapped in tender cabbage leaves and simmered in a rich tomato sauce.

Cabbage Rolls Fiesta (Голубцы)

Ingredients

  • 1 large head of cabbage
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup beef broth

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, or until they are pliable. Remove and set aside to cool.
  2. In a large bowl, combine the ground beef, cooked rice, onion, garlic, paprika, thyme, salt, and pepper. Mix until well combined.
  3. Place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides as you go. Place the rolls seam side down in a large pot.
  4. In a separate bowl, mix the crushed tomatoes and beef broth. Pour the mixture over the cabbage rolls in the pot.
  5. Cover the pot and simmer the cabbage rolls over low heat for 1 hour, or until the meat is cooked through and the cabbage is tender.
