Cabbage Rolls Fiesta (Голубцы)
Голубцы, or Cabbage Rolls, are a beloved dish in Belarusian cuisine. These hearty rolls are filled with a flavorful mixture of ground meat, rice, and spices, then wrapped in tender cabbage leaves and simmered in a rich tomato sauce.
Ingredients
- 1 large head of cabbage
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1 can (14 oz) crushed tomatoes
- 1 cup beef broth
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, or until they are pliable. Remove and set aside to cool.
- In a large bowl, combine the ground beef, cooked rice, onion, garlic, paprika, thyme, salt, and pepper. Mix until well combined.
- Place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides as you go. Place the rolls seam side down in a large pot.
- In a separate bowl, mix the crushed tomatoes and beef broth. Pour the mixture over the cabbage rolls in the pot.
- Cover the pot and simmer the cabbage rolls over low heat for 1 hour, or until the meat is cooked through and the cabbage is tender.
