Cabbage Rolls (krautkrapfen Craze)
Cabbage Rolls, also known as Krautkrapfen, are a traditional dish from Swabian cuisine. These hearty rolls are filled with a savory mixture of ground meat, rice, and spices, then wrapped in tender cabbage leaves and simmered in a flavorful broth.
Ingredients
- 1 large head of cabbage
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon caraway seeds
- Salt and pepper to taste
- 3 cups beef or vegetable broth
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, or until they are pliable. Remove and set aside.
- In a mixing bowl, combine the ground beef, cooked rice, chopped onion, minced garlic, paprika, caraway seeds, salt, and pepper. Mix until well combined.
- Place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides as you go. Secure with toothpicks if needed.
- Place the cabbage rolls in a large pot and pour the broth over them. Cover and simmer for 1 hour, or until the cabbage is tender and the filling is cooked through.
- Remove the toothpicks and serve the cabbage rolls with a ladle of the cooking broth.
