Cabbage Rolls (krautkrapfen Craze)

Cabbage Rolls, also known as Krautkrapfen, are a traditional dish from Swabian cuisine. These hearty rolls are filled with a savory mixture of ground meat, rice, and spices, then wrapped in tender cabbage leaves and simmered in a flavorful broth.

Cabbage Rolls (krautkrapfen Craze)

Ingredients

  • 1 large head of cabbage
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon caraway seeds
  • Salt and pepper to taste
  • 3 cups beef or vegetable broth

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, or until they are pliable. Remove and set aside.
  2. In a mixing bowl, combine the ground beef, cooked rice, chopped onion, minced garlic, paprika, caraway seeds, salt, and pepper. Mix until well combined.
  3. Place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides as you go. Secure with toothpicks if needed.
  4. Place the cabbage rolls in a large pot and pour the broth over them. Cover and simmer for 1 hour, or until the cabbage is tender and the filling is cooked through.
  5. Remove the toothpicks and serve the cabbage rolls with a ladle of the cooking broth.
