Cabbage Soup (ciorbă De Varză)

Ingredients

  • 1 small head of cabbage, shredded
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 can (14 oz) of diced tomatoes
  • 6 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the shredded cabbage, diced carrots, and cubed potatoes to the pot. Cook for 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and add the diced tomatoes, bay leaf, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 45 minutes, or until the vegetables are tender.
  4. Remove the bay leaf and adjust the seasoning if needed. Serve the cabbage soup hot, garnished with fresh herbs if desired.
