Cabbage Soup (ciorbă De Varză)
Cabbage Soup (Ciorbă de varză) is a traditional Moldovan dish known for its hearty and comforting flavors. This soup is packed with nutritious vegetables and is perfect for a cozy meal on a cold day.
Ingredients
- 1 small head of cabbage, shredded
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 can (14 oz) of diced tomatoes
- 6 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the shredded cabbage, diced carrots, and cubed potatoes to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and add the diced tomatoes, bay leaf, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 45 minutes, or until the vegetables are tender.
- Remove the bay leaf and adjust the seasoning if needed. Serve the cabbage soup hot, garnished with fresh herbs if desired.
