Ingredients
- 1 head of cabbage, shredded
- 2 carrots, diced
- 2 potatoes, cubed
- 1 onion, chopped
- 3 cloves of garlic, minced
- 6 cups of vegetable broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the carrots, potatoes, and cabbage to the pot.
- Pour in the vegetable broth and add the bay leaves.
- Season with salt and pepper, then bring the soup to a boil.
- Reduce the heat and let the soup simmer for 1 hour, or until the vegetables are tender.
- Remove the bay leaves before serving.
