Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 small onion, chopped
- 4 cloves garlic

- 1/2 tsp cayenne pepper
- Salt to taste
- 1 tsp baking soda
- Vegetable oil for frying
Instructions

- In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, cayenne pepper, and salt. Pulse until the mixture is finely ground but not pureed.
- Sprinkle baking soda over the mixture and pulse a few more times to combine.
- Transfer the mixture to a bowl, cover, and refrigerate for 1 hour.
- Form the mixture into small balls or patties and fry in hot oil until golden brown and crispy.
- Remove the falafel from the oil and drain on paper towels.
- Serve the falafel hot with pita bread, tahini sauce, and fresh vegetables.
