Ingredients
- 1 cup white rice
- 1 cup brown lentils
- 1 cup elbow macaroni
- 1 can chickpeas, drained and rinsed
- 1 onion, thinly sliced
- 4 garlic cloves, minced
- 1 can (14 oz) crushed tomatoes
- 2 tbsp white vinegar
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- Salt to taste
- Black pepper to taste
- Vegetable oil for frying
Instructions
- In separate pots, cook the rice, lentils, and macaroni according to package instructions. Drain and set aside.
- In a large skillet, heat vegetable oil over medium heat. Add the sliced onions and fry until golden and crispy. Remove from the skillet and place on a paper towel to drain excess oil.
- In the same skillet, sauté the minced garlic until fragrant. Add the crushed tomatoes, white vinegar, cumin, coriander, cayenne pepper, salt, and black pepper. Simmer for 10 minutes, then remove from heat.
- To assemble the koshary, layer the cooked rice, lentils, macaroni, and chickpeas in serving bowls. Top with the tomato sauce and garnish with the crispy fried onions.
