Ingredients

  • 1 cup elbow macaroni
  • 1 cup basmati rice
  • 1 cup brown lentils
  • 1 can chickpeas, drained and rinsed
  • 1 large onion, thinly sliced
  • 4 garlic cloves, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons white vinegar
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt to taste

Instructions

  1. In a large pot, cook the macaroni according to package instructions. Drain and set aside.
  2. Rinse the rice and lentils, then cook them in separate pots according to package instructions. Drain and set aside.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the sliced onions and cook until crispy and golden brown. Remove from the skillet and set aside on a paper towel to drain excess oil.
  4. In the same skillet, sauté the minced garlic until fragrant. Add the crushed tomatoes, white vinegar, cumin, coriander, cayenne pepper, and salt. Simmer for 10 minutes to allow the flavors to meld.
  5. To serve, layer the cooked macaroni, rice, lentils, and chickpeas in a bowl. Top with the spiced tomato sauce and crispy fried onions.
