Ingredients
- 4 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 can (400g) crushed tomatoes
- Salt and pepper to taste
- 8 eggs
- Feta cheese, crumbled, for garnish
- Fresh parsley, chopped, for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic, diced bell peppers, ground cumin, paprika, and cayenne pepper. Cook for 5 minutes.
- Pour in the crushed tomatoes and season with salt and pepper. Simmer for 10 minutes.
- Using a spoon, create small wells in the sauce and crack an egg into each well.
- Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
- Garnish with crumbled feta cheese and chopped parsley.
- Serve hot with crusty bread or pita.
