Cairo Sunrise Shakshuka (شكشوكة شروق القاهرة)

Ingredients

  • 4 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 can (400g) crushed tomatoes
  • Salt and pepper to taste
  • 8 eggs
  • Feta cheese, crumbled, for garnish
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic, diced bell peppers, ground cumin, paprika, and cayenne pepper. Cook for 5 minutes.
  4. Pour in the crushed tomatoes and season with salt and pepper. Simmer for 10 minutes.
  5. Using a spoon, create small wells in the sauce and crack an egg into each well.
  6. Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
  7. Garnish with crumbled feta cheese and chopped parsley.
  8. Serve hot with crusty bread or pita.
