Cajun Shrimp Scampi

Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup white wine
- 1/4 cup chicken broth
- 1 tablespoon fresh lemon juice
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 8 ounces linguine, cooked according to package instructions
Instructions
- Season the shrimp with Cajun seasoning.
- In a large skillet, melt 2 tablespoons of butter over medium heat.
- Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Cook for 1 minute until fragrant.
- Pour in the white wine and chicken broth, and bring to a simmer. Cook for 2-3 minutes to reduce the liquid slightly.
- Add the cooked linguine to the skillet and toss to coat in the sauce.
- Return the cooked shrimp to the skillet and toss to combine with the pasta and sauce.
- Stir in the fresh lemon juice and chopped parsley. Season with salt and pepper to taste.
- Remove from heat and serve hot.
