Cajun Shrimp Scampi

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup white wine
  • 1/4 cup chicken broth
  • 1 tablespoon fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 8 ounces linguine, cooked according to package instructions

Instructions

  1. Season the shrimp with Cajun seasoning.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat.
  3. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Cook for 1 minute until fragrant.
  5. Pour in the white wine and chicken broth, and bring to a simmer. Cook for 2-3 minutes to reduce the liquid slightly.
  6. Add the cooked linguine to the skillet and toss to coat in the sauce.
  7. Return the cooked shrimp to the skillet and toss to combine with the pasta and sauce.
  8. Stir in the fresh lemon juice and chopped parsley. Season with salt and pepper to taste.
  9. Remove from heat and serve hot.
