Cajun Turkey

Ingredients

  • 1 whole turkey, 12 pounds
  • 2 tablespoons cajun seasoning
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a small bowl, mix together the cajun seasoning, paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and pepper.
  3. Rub the turkey with olive oil, then rub the spice mixture all over the turkey, including under the skin.
  4. Place the turkey on a rack in a roasting pan, breast side up.
  5. Roast the turkey in the preheated oven for 3 to 3 1/2 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  6. Let the turkey rest for 20 minutes before carving.
