Cajun Turkey

Ingredients
- 1 whole turkey, 12 pounds
- 2 tablespoons cajun seasoning
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 1/4 cup olive oil
Instructions
- Preheat the oven to 325°F (165°C).
- In a small bowl, mix together the cajun seasoning, paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and pepper.
- Rub the turkey with olive oil, then rub the spice mixture all over the turkey, including under the skin.
- Place the turkey on a rack in a roasting pan, breast side up.
- Roast the turkey in the preheated oven for 3 to 3 1/2 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
- Let the turkey rest for 20 minutes before carving.
