Ingredients
- 4 medium zucchinis
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 250g ground beef
- 1 red bell pepper, diced
- 1 tomato, chopped
- 1/2 cup cooked rice
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 1/4 cup grated cheese (optional)
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the flesh, leaving a shell to stuff.
- In a pan, cook the onion and garlic until softened. Add the ground beef and cook until browned.
- Add the bell pepper, tomato, and zucchini flesh to the pan. Cook for a few minutes until the vegetables are tender.
- Stir in the cooked rice, paprika, cumin, salt, and pepper. Remove from heat.
- Stuff the zucchini shells with the meat and vegetable mixture. Sprinkle with grated cheese if desired.
- Place the stuffed zucchinis in a baking dish and bake for 30-35 minutes, or until the zucchinis are tender and the filling is heated through.
- Garnish with fresh parsley before serving.
