Ingredients

  • 4 medium zucchinis

  • 1 tomato, chopped
  • 1/2 cup cooked rice
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1/4 cup grated cheese (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the flesh, leaving a shell to stuff.
  3. In a pan, cook the onion and garlic until softened. Add the ground beef and cook until browned.
  4. Add the bell pepper, tomato, and zucchini flesh to the pan. Cook for a few minutes until the vegetables are tender.
  5. Stir in the cooked rice, paprika, cumin, salt, and pepper. Remove from heat.
  6. Stuff the zucchini shells with the meat and vegetable mixture. Sprinkle with grated cheese if desired.
  7. Place the stuffed zucchinis in a baking dish and bake for 30-35 minutes, or until the zucchinis are tender and the filling is heated through.
