Ingredients
- 4 medium zucchinis
- 1 pound ground beef
- 1 onion, finely chopped

- 1/2 cup grated cheese
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Trim the ends of the zucchinis and cut them in half lengthwise. Scoop out the flesh, leaving about 1/4 inch of the shell. Chop the scooped-out flesh and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper, and cook until softened.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the chopped zucchini flesh, paprika, cumin, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld.
- Fill the hollowed-out zucchini shells with the meat mixture and place them in a baking dish. Sprinkle the grated cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
- Serve the stuffed zucchinis hot, garnished with fresh herbs if desired.
