Ingredients

  • 4 medium zucchinis

  • Salt and pepper to taste
  • 1/2 cup grated cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Trim the ends of the zucchinis and cut them in half lengthwise. Scoop out the flesh, leaving about 1/4 inch of the shell. Chop the scooped-out flesh and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper, and cook until softened.
  4. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  5. Stir in the chopped zucchini flesh, paprika, cumin, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld.
  6. Fill the hollowed-out zucchini shells with the meat mixture and place them in a baking dish. Sprinkle the grated cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
  8. Serve the stuffed zucchinis hot, garnished with fresh herbs if desired.
