Ingredients

  • 4 small yellow squash
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 1 cup cooked rice
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheese
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the squash and scoop out the seeds to create a hollow cavity.
  3. In a skillet, cook the ground beef, onion, and garlic until the beef is browned and the onion is tender.
  4. Add the bell pepper, tomato, cooked rice, cumin, paprika, salt, and pepper to the skillet. Cook for an additional 5 minutes.
  5. Fill each squash with the meat and vegetable mixture, then place them in a baking dish.
  6. Sprinkle the stuffed squash with shredded cheese and bake for 30-35 minutes, or until the squash is tender.
  7. Garnish with chopped cilantro before serving.
