Ingredients
- 4 small yellow squash
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tomato, diced
- 1 cup cooked rice
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese
- 2 tablespoons chopped fresh cilantro
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the squash and scoop out the seeds to create a hollow cavity.
- In a skillet, cook the ground beef, onion, and garlic until the beef is browned and the onion is tender.
- Add the bell pepper, tomato, cooked rice, cumin, paprika, salt, and pepper to the skillet. Cook for an additional 5 minutes.
- Fill each squash with the meat and vegetable mixture, then place them in a baking dish.
- Sprinkle the stuffed squash with shredded cheese and bake for 30-35 minutes, or until the squash is tender.
- Garnish with chopped cilantro before serving.
