Ingredients
- 4 medium zucchinis
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tomato, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center.
- In a skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned.
- Stir in the cooked rice, tomato, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
- Stuff the hollowed-out zucchinis with the beef and rice mixture.
- Place the stuffed zucchinis in a baking dish, drizzle with olive oil, and sprinkle with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is melted and golden brown.
