Ingredients
- 4 medium-sized squid
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1/2 cup breadcrumbs
- 1/4 cup parsley, chopped
- 1/4 cup olive oil
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup white wine
- 2 tablespoons squid ink
Instructions
- Clean the squid, removing the tentacles and cartilage. Chop the tentacles and set aside.
- In a bowl, mix the chopped tentacles, onion, garlic, breadcrumbs, parsley, olive oil, paprika, salt, and pepper.
- Stuff the squid with the mixture and secure the openings with toothpicks.
- In a large pan, heat some olive oil over medium heat. Add the stuffed squid and cook until golden brown.
- Pour in the white wine and squid ink, cover, and simmer for 30 minutes.
- Remove the toothpicks and serve the squid with the ink sauce.
