Ingredients

  • 4 medium-sized squid
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup white wine
  • 2 tablespoons squid ink

Instructions

  1. Clean the squid, removing the tentacles and cartilage. Chop the tentacles and set aside.
  2. In a bowl, mix the chopped tentacles, onion, garlic, breadcrumbs, parsley, olive oil, paprika, salt, and pepper.
  3. Stuff the squid with the mixture and secure the openings with toothpicks.
  4. In a large pan, heat some olive oil over medium heat. Add the stuffed squid and cook until golden brown.
  5. Pour in the white wine and squid ink, cover, and simmer for 30 minutes.
  6. Remove the toothpicks and serve the squid with the ink sauce.
