Instructions
- In a bowl, combine the breadcrumbs, Manchego cheese, parsley, minced garlic, and olive oil. Season with salt and pepper.
- Stuff the squid with the breadcrumb mixture and secure the openings with toothpicks.
- In a large skillet, heat some olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Pour in the crushed tomatoes, broth, sugar, paprika, cayenne pepper, and bay leaf. Bring to a simmer.
- Add the stuffed squid and reserved tentacles to the skillet. Pour in the white wine. Cover and simmer for about 30-35 minutes, or until the squid is tender.
- Once the squid is cooked, remove the toothpicks and discard the bay leaf.
- Serve the stuffed squid in tomato sauce, garnished with additional parsley if desired.
