Calamares Rellenos (stuffed Calamari In Tomato Sauce)
Calamares Rellenos, or Stuffed Calamari in Tomato Sauce, is a traditional dish from Castilian-Leonese cuisine that features tender calamari stuffed with a flavorful mixture and simmered in a rich tomato sauce. This dish is a true delight for seafood lovers and is perfect for a special dinner or gathering.
Ingredients
- 4 large calamari, cleaned and tentacles reserved
- 1 cup cooked white rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tomato, diced
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup seafood or fish stock
- 1 can (14 oz) crushed tomatoes
- 1/4 cup dry white wine
Instructions
- In a large bowl, combine the cooked white rice, chopped onion, minced garlic, diced tomato, parsley, paprika, salt, and pepper. Mix well to create the stuffing.
- Stuff the calamari tubes with the rice mixture, leaving some space at the top to secure the filling. Use toothpicks to seal the openings.
- Heat olive oil in a large skillet over medium heat. Add the stuffed calamari and reserved tentacles, and cook for 2-3 minutes per side until lightly browned.
- Pour in the seafood or fish stock, crushed tomatoes, and white wine. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 30-35 minutes, or until the calamari is tender.
- Once cooked, remove the stuffed calamari from the skillet and transfer to a serving dish. Continue to simmer the sauce for a few more minutes until it thickens slightly.
- Remove the toothpicks from the calamari and serve them drizzled with the tomato sauce. Enjoy your delicious Calamares Rellenos!
