Ingredients
- 4 large calamari, cleaned and tentacles reserved
- 1 cup breadcrumbs
- 1/2 cup grated pecorino cheese
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 onion, finely chopped
- 2 cups tomato passata
- 1/2 cup white wine
Instructions
- In a bowl, combine the breadcrumbs, pecorino cheese, garlic, parsley, mint, and olive oil. Season with salt and pepper.
- Stuff the calamari with the breadcrumb mixture and secure the openings with toothpicks.
- In a large saucepan, heat some olive oil over medium heat. Add the onion and cook until softened.
- Add the tomato passata and white wine to the saucepan. Season with salt and pepper, then add the reserved calamari tentacles.
- Gently place the stuffed calamari in the sauce. Cover and simmer for 30-35 minutes, or until the calamari is tender.
- Remove the toothpicks and serve the stuffed calamari with the tomato sauce.
