  • 1 package of frozen puff pastry, thawed
  • 2 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp brown sugar
  • 8 oz brie cheese, rind removed, cut into small pieces
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry and cut it into 12 equal squares. Press each square into a greased muffin tin, forming a small pastry cup.

  4. Divide the caramelized onions among the pastry cups, then top with pieces of brie cheese.
  5. Brush the edges of the pastry with the beaten egg.
  6. Bake for 15-20 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
  7. Season with salt and pepper to taste.
  8. Serve the tartlets warm, garnished with fresh herbs if desired.
