Caldicot Castle Caramelized Onion And Cheddar Tart

Ingredients

  • 1 sheet of store-bought puff pastry
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 cup grated cheddar cheese
  • 2 eggs
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry and press it into a tart pan. Prick the bottom with a fork and blind bake for 15 minutes.
  3. While the pastry is baking, caramelize the onions. Heat the butter and olive oil in a pan over medium heat. Add the sliced onions and sugar. Cook, stirring occasionally, until the onions are golden and caramelized, about 20-25 minutes.
  4. In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
  5. Once the pastry is done blind baking, spread the caramelized onions over the bottom. Sprinkle the grated cheddar cheese on top.
  6. Pour the egg and cream mixture over the onions and cheese.
  7. Bake the tart for 30-35 minutes, or until the filling is set and the top is golden brown.
  8. Let the tart cool for a few minutes before slicing and serving.
