Caldicot Castle Cauliflower Gratin

Ingredients
- 1 large head of cauliflower, cut into florets
- 2 cups of heavy cream
- 1 cup of grated cheddar cheese
- 1/2 cup of grated Parmesan cheese
- 2 cloves of garlic, minced
- 1 teaspoon of Dijon mustard
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Steam the cauliflower florets until just tender, about 5-7 minutes. Drain and set aside.
- In a saucepan, heat the heavy cream over medium heat. Add the minced garlic and Dijon mustard, and stir until well combined.
- Stir in the cheddar cheese and half of the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Place the steamed cauliflower in a baking dish and pour the cheese sauce over the top. Sprinkle the remaining Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
