Caldicot Castle Cauliflower Gratin

Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 cups of heavy cream
  • 1 cup of grated cheddar cheese
  • 1/2 cup of grated Parmesan cheese
  • 2 cloves of garlic, minced
  • 1 teaspoon of Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Steam the cauliflower florets until just tender, about 5-7 minutes. Drain and set aside.
  3. In a saucepan, heat the heavy cream over medium heat. Add the minced garlic and Dijon mustard, and stir until well combined.
  4. Stir in the cheddar cheese and half of the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  5. Place the steamed cauliflower in a baking dish and pour the cheese sauce over the top. Sprinkle the remaining Parmesan cheese on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  7. Let it cool for a few minutes before serving.
