Ingredients
- 1 pound mixed seafood (shrimp, mussels, squid, etc.)
- 1 onion, chopped
- 2 tomatoes, diced
- 1 red bell pepper, sliced
- 3 garlic cloves, minced

- 1 teaspoon cumin
- 4 cups fish or seafood broth
- 1/4 cup white wine
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced tomatoes, sliced red bell pepper, and minced garlic. Cook for 5 minutes until the vegetables are softened.
- Add the paprika and cumin to the pot, stirring to coat the vegetables.
- Pour in the fish or seafood broth and white wine. Bring the mixture to a simmer.
- Add the mixed seafood to the pot and cook for 10-15 minutes, or until the seafood is fully cooked.
- Season the caldillo de mariscos with salt and pepper to taste.
- Serve the seafood stew hot, garnished with fresh parsley if desired.
