Ingredients

  • 1 jalapeño pepper, seeded and minced

  • 1 teaspoon paprika
  • 4 cups fish or shrimp stock

  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, red bell pepper, and jalapeño pepper. Cook until the vegetables are softened, about 5 minutes.
  3. Stir in the cumin and paprika, and cook for another minute.
  4. Pour in the fish or shrimp stock and diced tomatoes. Bring the mixture to a simmer.
  5. Add the shrimp to the pot and cook until they turn pink and opaque, about 3-4 minutes.
