Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño pepper, seeded and minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 4 cups fish or shrimp stock
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, garlic, red bell pepper, and jalapeño pepper. Cook until the vegetables are softened, about 5 minutes.
- Stir in the cumin and paprika, and cook for another minute.
- Pour in the fish or shrimp stock and diced tomatoes. Bring the mixture to a simmer.
- Add the shrimp to the pot and cook until they turn pink and opaque, about 3-4 minutes.
- Season the stew with salt and pepper to taste.
