Callaloo And Crab Stuffed Shrimp

Ingredients

  • 8 large shrimp, peeled and deveined
  • 1 cup callaloo, chopped
  • 1/2 cup crab meat
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the callaloo, crab meat, breadcrumbs, Parmesan cheese, garlic, cayenne pepper, salt, and black pepper.
  3. Cut a slit along the back of each shrimp, without cutting all the way through, to create a pocket for the stuffing.
  4. Stuff each shrimp with the callaloo and crab mixture.
