Ingredients
- 8 large shrimp, peeled and deveined
- 1 cup callaloo, chopped
- 1/2 cup crab meat
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the callaloo, crab meat, breadcrumbs, Parmesan cheese, garlic, cayenne pepper, salt, and black pepper.
- Cut a slit along the back of each shrimp, without cutting all the way through, to create a pocket for the stuffing.
- Stuff each shrimp with the callaloo and crab mixture.
- Heat the olive oil in a skillet over medium heat. Sear the stuffed shrimp for 2-3 minutes on each side until they turn pink.
