Ingredients

  • 1 lb salted cod, soaked and flaked
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1 scotch bonnet pepper, minced
  • 1 lb callaloo greens, chopped
  • 1 cup coconut milk
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onion, garlic, tomato, and scotch bonnet pepper. Sauté until the vegetables are softened.
  3. Add the callaloo greens and coconut milk to the pot. Cook until the greens are wilted.
  4. Stir in the flaked salted cod and cook for an additional 5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
