Callaloo And Saltfish
Callaloo and Saltfish is a traditional dish in the US Virgin Islands, featuring the flavors of callaloo greens and salted cod.
Ingredients
- 1 lb salted cod, soaked and flaked
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- 1 scotch bonnet pepper, minced
- 1 lb callaloo greens, chopped
- 1 cup coconut milk
- 1 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the onion, garlic, tomato, and scotch bonnet pepper. Sauté until the vegetables are softened.
- Add the callaloo greens and coconut milk to the pot. Cook until the greens are wilted.
- Stir in the flaked salted cod and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
