Ingredients
- 1 lb saltfish, soaked and flaked
- 2 cups callaloo leaves, chopped
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, seeded and minced
- 1/4 cup coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat vegetable oil over medium heat.
- Add onions, garlic, and scotch bonnet pepper. Sauté until onions are translucent.
- Add tomatoes and cook until they soften.
- Add flaked saltfish and cook for 5 minutes.
- Add callaloo leaves and coconut milk. Cook until the callaloo wilts.
- Season with salt and pepper to taste.
- Serve hot with fried dumplings or johnny cakes.
