Ingredients

  • 1 lb saltfish, soaked and flaked
  • 2 cups callaloo leaves, chopped
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, seeded and minced
  • 1/4 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat vegetable oil over medium heat.
  2. Add onions, garlic, and scotch bonnet pepper. Sauté until onions are translucent.
  3. Add tomatoes and cook until they soften.
  4. Add flaked saltfish and cook for 5 minutes.
  5. Add callaloo leaves and coconut milk. Cook until the callaloo wilts.
  6. Season with salt and pepper to taste.
  7. Serve hot with fried dumplings or johnny cakes.
