Callaloo Carnival
Callaloo Carnival is a traditional Guyanese dish that is bursting with flavor and vibrant colors. This dish is a celebration of the rich and diverse culinary heritage of Guyana, and it's perfect for bringing a taste of the Caribbean to your table.
Ingredients
- 1 lb callaloo leaves, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 scotch bonnet pepper, finely chopped
- 1 cup coconut milk
- 1 cup okra, sliced
- 1 cup pumpkin, diced
- 1 cup eggplant, diced
- 1 cup crab meat (optional)
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the onion, garlic, and scotch bonnet pepper. Sauté until the onions are translucent.
- Add the callaloo leaves and cook until wilted.
- Pour in the coconut milk and bring to a simmer.
- Add the okra, pumpkin, and eggplant. Cook for 15-20 minutes, or until the vegetables are tender.
- If using crab meat, add it to the pot and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot with rice or roti.
