Ingredients

  • 1 lb callaloo leaves, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, finely chopped
  • 1 cup coconut milk
  • 1 cup okra, sliced
  • 1 cup pumpkin, diced
  • 1 cup eggplant, diced
  • 1 cup crab meat (optional)
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onion, garlic, and scotch bonnet pepper. Sauté until the onions are translucent.
  3. Add the callaloo leaves and cook until wilted.
  4. Pour in the coconut milk and bring to a simmer.
  5. Add the okra, pumpkin, and eggplant. Cook for 15-20 minutes, or until the vegetables are tender.
  6. If using crab meat, add it to the pot and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot with rice or roti.
