Ingredients
- 2 cups callaloo, chopped
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup butter, melted
- 1 cup milk
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs and then stir in the melted butter and milk.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the chopped callaloo until evenly distributed in the batter.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 35-40 minutes, or until the cornbread is golden and a toothpick inserted into the center comes out clean.
- Let it cool for a few minutes before slicing and serving.
