Ingredients

  • 2 cups callaloo, chopped
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 1 cup milk
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the eggs and then stir in the melted butter and milk.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the chopped callaloo until evenly distributed in the batter.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 35-40 minutes, or until the cornbread is golden and a toothpick inserted into the center comes out clean.
  8. Let it cool for a few minutes before slicing and serving.
