Ingredients
- 1 lb callaloo leaves, chopped
- 1 onion, diced
- 3 cloves garlic, minced

- 1 scotch bonnet pepper, whole
- 1 cup okra, sliced
- 1 cup pumpkin, diced
- 1 cup crabmeat or salted cod (optional)
- 2 cups water
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the bell pepper and tomatoes, and cook until softened.
- Pour in the coconut milk and add the scotch bonnet pepper for flavor.
- Stir in the callaloo leaves, okra, pumpkin, and crabmeat or salted cod if using.
- Pour in the water, season with salt and pepper, and let simmer for 30 minutes.
- Remove the scotch bonnet pepper before serving.
