Ingredients

  • 1 scotch bonnet pepper, whole
  • 1 cup okra, sliced
  • 1 cup pumpkin, diced
  • 1 cup crabmeat or salted cod (optional)
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add the bell pepper and tomatoes, and cook until softened.
  3. Pour in the coconut milk and add the scotch bonnet pepper for flavor.
  4. Stir in the callaloo leaves, okra, pumpkin, and crabmeat or salted cod if using.
  5. Pour in the water, season with salt and pepper, and let simmer for 30 minutes.
  6. Remove the scotch bonnet pepper before serving.
