Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups chopped callaloo leaves
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the chopped callaloo leaves, thyme, paprika, salt, and pepper to the skillet. Cook for 5-7 minutes, or until the callaloo is wilted and tender. Remove from heat and let it cool.
  4. Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness.
  5. Divide the callaloo mixture evenly among the chicken breasts, then roll up each chicken breast and secure with toothpicks.
  6. Place the stuffed chicken breasts in a baking dish and bake for 30-35 minutes, or until the chicken is cooked through.
