Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups chopped callaloo leaves
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the chopped callaloo leaves, thyme, paprika, salt, and pepper to the skillet. Cook for 5-7 minutes, or until the callaloo is wilted and tender. Remove from heat and let it cool.
- Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness.
- Divide the callaloo mixture evenly among the chicken breasts, then roll up each chicken breast and secure with toothpicks.
- Place the stuffed chicken breasts in a baking dish and bake for 30-35 minutes, or until the chicken is cooked through.
