Calypso Stir-fry

Ingredients
- 1 lb boneless chicken, sliced
- 2 cups mixed bell peppers, sliced
- 1 cup pineapple chunks
- 1/2 cup snow peas
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp brown sugar
- 1 tsp chili flakes
- 2 tbsp vegetable oil
Instructions
- Heat vegetable oil in a wok or large skillet over high heat.
- Add the sliced chicken and stir-fry for 3-4 minutes until cooked through.
- Push the chicken to the side of the wok and add garlic, ginger, and chili flakes. Stir-fry for 1 minute.
- Add the mixed bell peppers, snow peas, and pineapple chunks. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
- In a small bowl, mix together soy sauce, oyster sauce, and brown sugar. Pour the sauce over the stir-fry and toss to combine.
- Cook for an additional 1-2 minutes until the sauce thickens slightly.
- Remove from heat and serve the Calypso Stir-Fry hot with steamed rice.
