Calypso Stir-fry

Ingredients

  • 1 lb boneless chicken, sliced
  • 2 cups mixed bell peppers, sliced
  • 1 cup pineapple chunks
  • 1/2 cup snow peas
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tsp chili flakes
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a wok or large skillet over high heat.
  2. Add the sliced chicken and stir-fry for 3-4 minutes until cooked through.
  3. Push the chicken to the side of the wok and add garlic, ginger, and chili flakes. Stir-fry for 1 minute.
  4. Add the mixed bell peppers, snow peas, and pineapple chunks. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix together soy sauce, oyster sauce, and brown sugar. Pour the sauce over the stir-fry and toss to combine.
  6. Cook for an additional 1-2 minutes until the sauce thickens slightly.
  7. Remove from heat and serve the Calypso Stir-Fry hot with steamed rice.
