Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/2 cup pineapple chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 onion, cut into chunks
- 3 cloves garlic, minced
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon ginger, grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
Instructions
- In a small bowl, whisk together ketchup, rice vinegar, brown sugar, soy sauce, cornstarch, ginger, salt, and black pepper to make the sweet and sour sauce. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic and stir-fry for 30 seconds until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add pineapple chunks, red bell pepper, green bell pepper, and onion. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
- Pour the sweet and sour sauce over the vegetables in the skillet. Cook, stirring constantly, until the sauce thickens and coats the vegetables.
- Return the cooked shrimp to the skillet and toss to coat with the sweet and sour sauce.
- Remove from heat and serve the Camarones Agridulces Cubanos hot, garnished with chopped green onions, if desired.
