Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/2 cup pineapple chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 onion, cut into chunks
- 3 cloves garlic, minced
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1/4 cup water
- Salt and pepper to taste
- Cooked white rice, for serving
Instructions
- In a small bowl, mix together the rice vinegar, brown sugar, soy sauce, cornstarch, and water to make the sweet and sour sauce. Set aside.
- Season the shrimp with salt and pepper. In a large skillet or wok, heat some oil over high heat. Add the shrimp and cook until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add a little more oil if needed. Sauté the garlic, onion, and bell peppers until they start to soften.
- Add the pineapple chunks to the skillet and cook for a few minutes.
- Pour the sweet and sour sauce over the vegetables in the skillet. Cook, stirring constantly, until the sauce thickens and coats the vegetables.
- Return the cooked shrimp to the skillet and toss to coat everything in the sweet and sour sauce.
- Serve the Camarones Agridulces over cooked white rice.
