Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup pineapple chunks
  • 1/2 cup sweet and sour sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

Instructions

  1. In a bowl, toss the shrimp with cornstarch until evenly coated.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the shrimp and cook until golden and crispy, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the diced bell peppers and cook for 2-3 minutes until slightly softened.
  4. Add the pineapple chunks, sweet and sour sauce, rice vinegar, soy sauce, brown sugar, minced ginger, and minced garlic to the skillet. Stir to combine and bring to a simmer.
  5. Return the cooked shrimp to the skillet and toss to coat in the sweet and sour sauce. Cook for an additional 2-3 minutes until the shrimp is heated through.
  6. Season with salt and pepper to taste.
  7. Serve the Camarones Agridulces over steamed rice and enjoy!
