Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/2 cup cornstarch
- 1/4 cup vegetable oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup pineapple chunks
- 1/2 cup sweet and sour sauce
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- Salt and pepper to taste
Instructions
- In a bowl, toss the shrimp with cornstarch until evenly coated.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the shrimp and cook until golden and crispy, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the diced bell peppers and cook for 2-3 minutes until slightly softened.
- Add the pineapple chunks, sweet and sour sauce, rice vinegar, soy sauce, brown sugar, minced ginger, and minced garlic to the skillet. Stir to combine and bring to a simmer.
- Return the cooked shrimp to the skillet and toss to coat in the sweet and sour sauce. Cook for an additional 2-3 minutes until the shrimp is heated through.
- Season with salt and pepper to taste.
- Serve the Camarones Agridulces over steamed rice and enjoy!
