Cambodian Beef and Pumpkin Stew (Sach Kor La'or)

Ingredients

  • 1 lb beef, cut into cubes
  • 2 cups pumpkin, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, diced
  • 2 cups beef broth
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp palm sugar
  • 1 tsp turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 cinnamon stick
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat some oil in a large pot over medium heat. Add the onions, garlic, and ginger. Cook until fragrant.
  2. Add the beef cubes and brown on all sides.
  3. Stir in the tomatoes, pumpkin, beef broth, fish sauce, soy sauce, palm sugar, turmeric, coriander, cumin, and cinnamon stick.
  4. Season with salt and pepper. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until the beef is tender.
  5. Remove the cinnamon stick and discard. Serve the stew hot, garnished with fresh cilantro.
