Cambodian Beef and Pumpkin Stew (Sach Kor La'or)
Sach Kor La'or is a traditional Cambodian beef and pumpkin stew that is rich in flavor and perfect for cooler weather. This hearty stew combines tender beef, sweet pumpkin, and aromatic spices for a comforting and satisfying meal.
Ingredients
- 1 lb beef, cut into cubes
- 2 cups pumpkin, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 2 cups beef broth
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp palm sugar
- 1 tsp turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 cinnamon stick
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat some oil in a large pot over medium heat. Add the onions, garlic, and ginger. Cook until fragrant.
- Add the beef cubes and brown on all sides.
- Stir in the tomatoes, pumpkin, beef broth, fish sauce, soy sauce, palm sugar, turmeric, coriander, cumin, and cinnamon stick.
- Season with salt and pepper. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until the beef is tender.
- Remove the cinnamon stick and discard. Serve the stew hot, garnished with fresh cilantro.
