Cambodian Green Mango Salad (Nhoam Svay K'rook)

Ingredients

  • 2 green mangoes, julienned
  • 1/2 cup fresh mint leaves, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup shallots, thinly sliced
  • 1/4 cup roasted peanuts, crushed
  • 1/4 cup dried shrimp (optional)
  • 1/4 cup fish sauce
  • 2 tablespoons lime juice
  • 2 tablespoons sugar
  • 1 tablespoon garlic, minced
  • 1 teaspoon chili flakes

Instructions

  1. In a large bowl, combine the julienned green mango, chopped mint, chopped cilantro, sliced shallots, crushed peanuts, and dried shrimp (if using).
  2. In a small bowl, whisk together the fish sauce, lime juice, sugar, minced garlic, and chili flakes to make the dressing.
  3. Pour the dressing over the mango mixture and toss to coat evenly.
  4. Let the salad sit for 10 minutes to allow the flavors to meld together.
