Ingredients
- 2 green mangoes, julienned
- 1/2 cup fresh mint leaves, chopped
- 1/2 cup fresh cilantro, chopped
- 1/4 cup shallots, thinly sliced
- 1/4 cup roasted peanuts, crushed
- 1/4 cup dried shrimp (optional)
- 1/4 cup fish sauce
- 2 tablespoons lime juice
- 2 tablespoons sugar
- 1 tablespoon garlic, minced
- 1 teaspoon chili flakes
Instructions
- In a large bowl, combine the julienned green mango, chopped mint, chopped cilantro, sliced shallots, crushed peanuts, and dried shrimp (if using).
- In a small bowl, whisk together the fish sauce, lime juice, sugar, minced garlic, and chili flakes to make the dressing.
- Pour the dressing over the mango mixture and toss to coat evenly.
- Let the salad sit for 10 minutes to allow the flavors to meld together.
- Transfer the salad to a serving platter and serve immediately.
