Ingredients
- 1 lb rice noodles
- 1 lb chicken, thinly sliced
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 onion, thinly sliced
- 2 red chilies, thinly sliced
- 3 tbsp fish sauce
- 2 tbsp soy sauce
- 1 tbsp sugar
- 4 cups chicken broth
- 1 cup bean sprouts
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions
- Soak the rice noodles in hot water for 15 minutes, then drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the garlic, onion, and red chilies, and cook until fragrant.
- Add the sliced chicken to the pot and cook until no longer pink.
- Stir in the fish sauce, soy sauce, and sugar. Pour in the chicken broth and bring to a boil.
- Add the soaked rice noodles to the pot and cook for 3-4 minutes until tender.
- Divide the soup among serving bowls and top with bean sprouts and cilantro. Serve with lime wedges.
