Cambodian Spicy Noodle Soup (K'tieu Cha)

Ingredients

  • 1 lb rice noodles
  • 1 lb chicken, thinly sliced
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 2 red chilies, thinly sliced
  • 3 tbsp fish sauce
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 4 cups chicken broth
  • 1 cup bean sprouts
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Soak the rice noodles in hot water for 15 minutes, then drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the garlic, onion, and red chilies, and cook until fragrant.
  3. Add the sliced chicken to the pot and cook until no longer pink.
  4. Stir in the fish sauce, soy sauce, and sugar. Pour in the chicken broth and bring to a boil.
  5. Add the soaked rice noodles to the pot and cook for 3-4 minutes until tender.
  6. Divide the soup among serving bowls and top with bean sprouts and cilantro. Serve with lime wedges.
