Cameroonian Style Grilled Chicken (Poulet Braisé)

Ingredients

  • 4 chicken leg quarters
  • 1/4 cup vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the vegetable oil, chopped onion, minced garlic, grated ginger, paprika, cayenne pepper, thyme, salt, and pepper to create the marinade.
  2. Place the chicken leg quarters in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 4 hours or overnight.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 20-25 minutes on each side, or until the chicken is cooked through and has a charred, smoky flavor.
  4. Once grilled, remove the chicken from the heat and let it rest for a few minutes before serving.
